Roast turkey Christmas dinner


When you’re having the family over for Christmas Day, it’s essential to get your turkey just right. Our simple recipe will make sure that your RSPCA Assured turkey is perfectly cooked with a succulent, juicy flavour and deliciously crispy skin.

  • 1 RSPCA Assured turkey
  • 1 Medium onion
  • 1 lemon 150g of butter (softened)
  • Mixed herbs
  • Ensure your RSPCA Assured turkey is at room temperature and preheat the oven to 190C (374F).
  • Peel and half one onion. 
  • Slice one lemon in half.
  • Use these to stuff the turkey together with a handful of mixed herbs including, rosemary and sage.
  • Smear 150g of softened butter into the skin.
  • Place the turkey breast-side down in a baking tray and cover it with tin foil.
  • Bake for 1 hour and 45 minutes.
  • Remove from the oven, baste and turn over.
  • Cover the turkey again and bake for a further 20 minutes.
  • Remove from the oven and ensure it’s cooked.
  • Leave the tinfoil in place, cover with a tea towel and leave it to stand for another hour.
  • Serve with roast potatoes and all the trimmings.
