Tomato pasta sauce

  • 1 onion diced
  • Olive oil
  • 500g tomato passata
  • 300g vegetable stock
  • Dried basil
  • Preheat the oven to 180c 
  • Use a large frying pan with a metal handle or a casserole dish
  • Dice one onion and gently fry in olive oil until it softens.
  • Add the tomato passata and dried basil and stir well
  • Add the vegetable stock and bring to the boil 
  • Transfer to the oven and cook until the sauce thickens (about 1 hour)
  • Remove from the oven and serve with fresh pasta
