Irish potato cakes

Ingredients

Make wonderful potato griddle cakes in a few minutes by following this recipe. A wonderful accompanying dish with a cooked breakfast or even an evening meal as an alternative to chips.

  • 225g raw potato
  • 225g mashed potato
  • 65g all purpose flour
  • 1 RSPCA Assured labelled egg
  • Salt and pepper
Method
  • Grate raw potatoes and mix with the cooked mashed potatoes. 
  • Add salt, pepper and flour.
  • Beat egg and add to mixture with just enough milk to make a batter that will drop from a spoon.  
  • Drop by tablespoonfuls onto a hot griddle or frying pan.
  • Cook over a moderate heat for 3-4 minutes on each side.  
  • Serve with fried bacon, fried sausage, fried eggs, fried black pudding and fried soda bread.
